Aviation Catering Glossary — 50+ Key Terms Defined
The Délicieux Aviation Catering Glossary defines the terminology used in private jet catering, inflight dining, and flight kitchen operations. A reference for pilots, flight attendants, FBO operators, Directors of Operations, charter companies, and aviation concierge professionals.
Essential Terms
HACCP
Hazard Analysis and Critical Control Points — the internationally recognized food safety management system required for compliant aviation catering. Eight CCPs govern time, temperature, and cross-contamination controls in a certified flight kitchen.
FBO (Fixed-Base Operator)
The ground facility where private aircraft park, refuel, and receive services. Most catering is delivered to the FBO ramp and transferred to the aircraft by FBO staff or directly by the catering team.
Galley
The food preparation and storage area aboard an aircraft. Light jets typically have no galley; midsize jets have small oven galleys; heavy jets have full galleys with multiple ovens and refrigeration.
Chain of Custody
The documented, unbroken trail of accountability for food from kitchen production through packaging, transport, delivery, and galley handoff. Required for HACCP compliance and aviation security protocols.
Crew-Ready Standard
Délicieux's 28-pillar delivery protocol ensuring every order is organized, labeled, documented, and ready for immediate flight attendant service without additional preparation.
Triple-Point Label
Délicieux's per-item label system combining passenger name, aircraft tail number, and temperature/reheating instructions on every food container.
First-Look Galley Map
A visual layout document showing the flight attendant exactly where every item is stored in the galley — by course, passenger, and location — delivered with every Délicieux order.
Silent Dispatch Protocol
Délicieux's automated SMS alert system sending Pack Start, 10 Minutes Out, and Handoff Confirmed notifications directly to the flight attendant — before the FBO is notified.
HighLoader
A hydraulic platform vehicle used to access galley doors on wide-body and high-door aircraft (BBJ, ACJ, Lineage 1000E) at apron height for galley-to-shelf direct delivery.
Élevé / Affiné / Gastronome Privé
The three quality tiers in Délicieux's catering program — Élevé (Essential Collection), Affiné (Signature Collection), and Gastronome Privé (Michelin-level bespoke fine dining).
