A baseline galley stock is not a substitute for proper inflight catering — it's the insurance policy that sits beneath your catering program. When schedules shift, when a leg gets added with insufficient lead time to order, or when catering arrives with a discrepancy that needs to be supplemented, a well-stocked galley pantry is what keeps your service from falling apart.
Here's DFK's recommended baseline stock for a corporate private aircraft. This list covers the essentials — quality items that last well in a galley environment and provide a serviceable fallback for any situation.
Beverages
Non-alcoholic baseline:
- Still water — preferred brand, at minimum 6 bottles per seat per day of operations
- Sparkling water — same quantity
- Premium coffee — whole beans or quality pods for your aircraft's coffee system
- Quality tea selection — black, green, herbal minimum
- Premium juices — orange, grapefruit, tomato in individual servings
- Non-caffeinated options — premium sparkling juice, coconut water, quality lemonade
Alcoholic baseline (operator policy permitting):
- Champagne or quality sparkling wine — minimum 2 bottles

- One quality red wine
- Standard spirits — vodka, gin, whiskey, bourbon (travel-size or standard bottles depending on storage)
- Mixers — tonic, soda water, ginger beer
Dry Goods and Pantry Staples
- Quality crackers — two varieties minimum (plain, seeded or herb)
- Premium mixed nuts (check operator allergy policy for crew) in sealed portions
- Quality dark chocolate — individual squares or a bar
- Dried fruit — apricots, dates, cranberries in sealed portions
- Quality protein bars — 2–3 varieties to serve different preferences
- Individual honey and jam packets — for toast service when ordered
- Sea salt and quality black pepper in personal portions
Condiments and Service Essentials
- Quality olive oil packets
- Hot sauce (Tabasco minimum, Cholula preferred by many crews)
- Dijon mustard in individual portions
- Disposable napkins — premium quality, cloth-feel
- Toothpicks
- Biodegradable serving utensils (backup for any catering service)
Rotation Schedule
Galley stock has shelf life. A rotation schedule — checking dates at every major inspection cycle or monthly minimum — keeps the stock from accumulating expired items.
