How DFK Approaches Remote Airport Catering
The first thing we do when a catering order comes in for a remote airport: we assess the delivery logistics honestly. Our 460+ airport network doesn't mean we have a kitchen 20 minutes from every airport in that network — it means we've developed delivery coordination approaches for airports across our service geography, including remote locations.
For remote airports, we typically:
- Identify the nearest DFK hub to the departure airport
- Calculate the drive time and transit conditions for the delivery route
- Assess whether we can meet your delivery window with acceptable cold chain integrity
- Give you a specific answer: "Yes, we can do this with [X] lead time" or "Here's what the limitations are"
What Changes for Remote Airport Catering
Lead time requirements increase: A 3-hour transit to a remote airport requires earlier production than a 30-minute transit to a hub FBO. For remote airports, 72+ hours is our strong recommendation rather than the 24-hour minimum we can sometimes accommodate at hub airports.
Menu options may narrow: Specialty sourcing, complex preparations, and VVIP-tier service are all achievable for remote airports with sufficient lead time. With limited lead time, the menu may narrow to what our kitchen has on hand and what travels safely over the transit distance.
FBO coordination is more important: At a small airport, "the FBO" may be a single person managing multiple functions. DFK coordinates with the airport's operations contact in advance to confirm the delivery process, access, and storage availability.
