DFK's minimum order threshold is designed to cover the production and delivery cost of a real catering order — not to exclude small orders, but to ensure that every order we produce meets our quality standard. A single-passenger continental breakfast service, properly executed, has real production, packaging, cold chain, and delivery costs. Our minimum ensures we can cover those costs without compromising quality or sustainability.
For most flight profiles, DFK's minimum order is well below what's appropriate for even the simplest single-passenger leg. A quality continental breakfast for one passenger — artisan pastry, fresh fruit, quality coffee, still water — is a meaningful order that's well above any minimum threshold.
Single-Passenger Leg Catering
The smallest real catering order DFK produces regularly is for a single-passenger repositioning or business trip. For one passenger:
- A quality continental setup (pastry, fruit, coffee, water) is appropriate for a short morning leg
- A composed cold lunch — quality sandwich or salad, snack, beverage — for a mid-day leg
- A hot protein entrée with sides for a dinner-time leg
These single-passenger orders are real, worth ordering from a professional kitchen, and not unusual for DFK to produce.
The Repositioning/Ferry Flight
For crew-only repositioning flights, the catering need is typically crew meals only — practical, substantial food for the flight crew without passenger service complexity. DFK's crew meal packages are specifically designed for this scenario: quality food, appropriate portions, properly packaged, at pricing that makes sense for a crew-only flight.
When Not to Order
The only flight profile where we'd honestly suggest not ordering from DFK: a single-pilot ferry leg of under 30 minutes where the pilot has no interest in eating during the flight. That's a personal judgment call, not a catering decision. For any flight where food will be consumed — any length, any passenger count — DFK can produce and deliver appropriately.
