The policy exists because shellfish carries the highest rate of serious allergic reaction of any common food category — and shellfish allergies can develop in adults who were previously non-allergic, with no prior warning. A crew member who has never had a shellfish allergy could have a severe reaction to shellfish consumed during duty hours.
A severe allergic reaction in a pilot during flight is a Class I aviation safety event. A severe allergic reaction in a flight attendant during a long flight is a serious operational problem. The probability of this scenario on any given flight is low — but the consequence is so severe that many operators have adopted a precautionary policy prohibiting crew consumption of shellfish during duty periods.
This policy is distinct from commercial airline policies, which typically prohibit only specific high-risk shellfish items on specific routes. Corporate aviation operators often make a broader precautionary choice.
How the Policy Typically Works
The most common form of the policy: flight crew (pilots) are prohibited from consuming shellfish during their entire duty day. Flight attendants may or may not be included, depending on the operator.
Some operators apply the policy to the entire crew on a shared-meal basis: if any shellfish is on the aircraft and could be accidentally consumed by crew members, it's excluded from the manifest. Others apply it specifically to crew-designated meals while allowing shellfish in passenger service with clear labeling.
